Was there a meal from your childhood that seemed to be your parents’ “go to” meal? One that could be made if they did not have time to go to the store or could be made with ingredients already in the kitchen? This is one of those types of dishes. My mom always called it “poor people Thai food”, but I loved it. I made it for my family the other day and they really liked it. It might have to become an easy staple dinner dish in my household. Try it out.

1/2 lb ground pork
6 large eggs, lightly scrambled
Pinch of salt
Pepper, to taste
1 tsp fish sauce
2 tbsp oil of your choice
1 stalk green onion, thinly sliced
In a medium bowl, mix together the pork, eggs, salt, pepper and fish sauce. Set aside.
Heat nonstick skillet over medium high heat and add in the oil. Once hot, add a 1/4c of the pork-egg mixture to the skillet, creating personal sized omelettes. Cook one each side for about 4 minutes, lowering heat if necessary to keep from burning. Place on a plate and repeat the process until all the omelettes are made.
Top the omelettes with green onion and serve on top of steamed jasmine rice with soy sauce.
Cooks note: Corn, thinly sliced onion, ground chicken, and anything else you have in your kitchen would be a great addition to this omelette. Just make sure to slice everything thin to ensure it all cooks through at the same time. Happy cooking!

No need to cook prior to adding to the egg since the meat is ground. Traditionally, this is served on a bed of steamed rice with fresh vegetables such as cucumber slices and hot sauce.
