Have you ever wanted an easy option for dinner? One that you can set in the oven with a timer going and forget about? Those are the best!
The original version of this recipe used half of the amount of spice, and only placed it on the skin. The meat was not as flavorful as it could have been in my opinion, so I doubled the spice and rubbed it over the entire piece of chicken.

8-10 bone-in chicken legs or thighs*
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp smoked paprika
1/2 tsp fresh ground pepper
1/4 tsp salt
1 tbsp olive oil
Preheat oven to 350 F. Line a rimmed baking sheet with foil to ensure an easier clean up.
Place chicken pieces in either a large bowl or a zip topped bag. In a bowl combine all the spices. Mix together well. Add to the chicken, along with the olive oil.
Once well coated place chicken pieces, skin side up on the cookie sheet. Bake for 1 hour or until the juices run clear; 165 F on a meat thermometer.
Serve this easy, yummy chicken with my garlic mashed potatoes or even my charred broccoli.
*for a healthier option, I have even removed the skin, but still leaving the bone-in.
