When I came across the original version of this recipe, I was looking for a good way to use up the 3 bananas I had laying around my kitchen. Little did I know that this would become a staple recipe in my house. I made a change and I even made a variation of the recipe. It is a great base recipe. I hope you enjoy it as much as I do!
3 bananas, as ripe as you can stand it, peeled
1/3 c butter, melted
1 tsp baking soda
Pinch of salt
3/4 c sugar
1 egg, beaten
1 tsp vanilla
1-1/2 c all purpose flour
2 tsp raw sugar
Preheat oven to 350F and grease your 4×8” bread pan with butter. In a mixing bowl, mash the bananas until smooth. Stir in the melted butter. Mix in the baking soda, salt, sugar, egg, and vanilla. Gently mix in the flour.
Pour the batter into the prepared pan. Sprinkle the top with raw sugar, spreading evenly. Bake for 50 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool in the pan for a few minutes. Remove the bread from the pan and allow to completely cool on a cooling rack.
Enjoy!
Variation: add 1 cup of dark chocolate chips to your batter prior to baking.
