Wontons

Have you ever taken an item to a party that ended up becoming your signature dish? This dish is what I became known for. If my friends were planning a party, they always asked if I was making wontons. So of course, I would! I hope you take this dish and make it your own. Use different proteins; create different dipping sauces. What’s not to love?

1 lb ground pork
2 cloves garlic, minced
1 tsp garlic powder
2 tsp white pepper, ground
1 tsp salt
Pinch of cayenne
1 green onion, finely chopped
1 tsp fish sauce
1 large egg, separated
1 pkg wonton wrappers
Small glass of water
Canola oil for deep frying

In a medium sized mixing bowl place the pork, garlic, garlic powder, pepper, salt, cayenne, green onion and fish sauce. Mix together well. Add the egg white to the mixture.

Place the egg yolk in a small bowl and gently break the yolk open. Set up your wrapping station, just like when wrapping the pan fried dumplings. To see the station set up, review the pan fried dumplings blog.

Take a tsp worth of the meat mixture and place it in the center of the wonton skin. Fold the skin in half over the mixture, creating a triangle shape. If you’d like to keep it in this shape, seal it with the egg yolk before folding it in half. To create the special shape I use, after folding in half, take the opposite corners and bring them together. Seal the edges together to create the “pursed” wonton. Finish wrapping all the wontons.

To deep fry:
Fill a 3 qrt sauce pan with your oil, heating over medium-high heat until hot enough to fry. Since I am a home cook, I honestly can’t tell you what the temperature of your fryer should be. But, as a cheat, I take a wooden chopstick and hold it in the oil. If small bubbles appear on the chopstick then the oil is hot enough to fry your wontons.

Place about 5 wontons in the oil to fry. Allow the wontons to cook, turning once until they are a beautiful golden brown. Remove from oil and leave to drain on a plate lined with a paper towel. Repeat process until all the wontons are cooked.

Allow to cool slightly and enjoy!

Wontons taste great dipped in Mae Ploy Sweet Chili Sauce or my yummy dipping sauce.

Dipping Sauce:
2 tbsp chili garlic paste
1 tbsp soy sauce
1 tsp honey

Mix together until the honey is dissolved.
