Pad ka prow (Thai spicy chicken with basil)

Have you ever wanted to make a fun dish for a party and could not come up with an original idea? That is how this dish came to life. I wanted to make two Thai dishes to take to a party but wasn’t sure what to make to accompany the fried wontons I was planning to make. I wanted something quick, spicy and different. And my version of pad ka prow was born!

2 tbsp Olive oil
1-2 Thai bird chili peppers, sliced thin
2 cloves garlic, minced
1 lb chicken breast, diced
2 tbsp oyster sauce
1 tbsp soy sauce
2 tsp fish sauce
1/4 c water
1 tbsp Thai basil leaves, julienned

Cooked jasmine rice for serving

In a large skillet, heat the oil over medium-high heat. To the oil add your chili peppers and garlic. Be careful, the oils from the peppers can take your breath away. This feeling subsides quickly. Cook together in the oil for about 2 minutes. Add diced chicken to the spicy garlic. And cook halfway, about 5 minutes. Add the sauces and water, mixing well. Allow chicken to cook through, about 5 more minutes. Remove from heat and add the Thai basil to the skillet; cover with a lid. Let rest for about 3 minutes. Serve with jasmine rice.
