Have you ever wanted a tasty, healthy, fast meal? Grilled chicken breast is a staple in our house that meets the criteria. Honestly, it is super quick and super delicious. 1 tbsp olive oil
2 8oz chicken breast, cut into half
Salt, taste
Pepper, to taste

Heat a 12” cast iron skillet over medium-high heat for about 2 minutes. Add the olive oil and heat for an additional minute. While the skillet is heating, prep the chicken breast pieces. Trim off all the fat, flatten the chicken breast with your hand and starting on the thickest side of the breast, slice the breast into half, from one side to the will create 2 even pieces that will cook quickly. Season both halves with salt and pepper on both sides.
When the oil is hot, place 2 halves in the skillet. Cook for 1 minute, then squeeze the lemon juice over chicken, making sure no seeds fall in. Allow to cook until brown bits appear on the chicken, about 3-4 minutes more. Flip the chicken breast halves over and squeeze more lemon juice. Cook for an additional 3 minutes. Remove the chicken breast to a plate to rest while cooking the remaining pieces.
