Grilled zucchini

Have you been in such a rush to make dinner or you can’t think of what side dish to make? Grilled zucchini is one of the simplest and healthiest sides I like. The preparation is fast and clean up is simple. What could be better?

3 medium zucchini, sliced into discs or long strips
1 tsp salt
1 tsp pepper
1 tsp paprika
2 tbsp olive oil

While preparing your zucchini pieces, preheat a cast iron skillet or griddle in your oven on 350F for about 10 minutes. Meanwhile, cut the zucchini into thin strips or discs using a mandolin. Once the zucchini is sliced, place it in a large bowl or a zip top bag. Add all of the seasoning and mix together well.

Remove the cast iron griddle and place it on top of the stove. If you have a long burner, this is your best option. Otherwise, use both the front and back burner on your stove. Try to have both burners heated to the same heat level.

Place each slice of zucchini on the griddle for 8-10 minutes, flipping halfway through cooking. Continue the cooking process until all the zucchini is grilled. Set aside in a warmed dish until ready to eat.
