This recipe has become a staple in my house. It is comforting and quick; I usually have all the ingredients on hand at all times. I found the original recipe on Food Network, but like most other recipes, made a couple changes. This one is a keeper, I promise.

1 tbsp unsalted butter
1 small onion, diced
8-10 oz ham, diced
1 tsp fresh thyme, chopped
1/2 c chicken broth
3/4 c water
1 17oz package gnocchi
1 10oz bag frozen peas, thawed
1/4 c heavy cream or half and half
Salt
Pepper
1 c Swiss or Gruyere cheese, shredded
Red pepper flakes (optional)
In a ovenproof skillet, melt the butter over medium-high heat. Add the onions and cook for about 3 minutes. Add ham and thyme. Continue cooking until ham is lightly browned.
Add the chicken broth and water, bringing to a light simmer. Add gnocchi to the skillet and stir well. Cover the skillet with a tight fitting lid. Cook the gnocchi for 5 minutes or until slightly tender. Uncover and season with salt and pepper, stir in cream and peas. Remove from heat.
Preheat the broiler to high heat. Sprinkle the cheese over the top of the gnocchi. Place the skillet into the oven and broiler, with the door slightly ajar, for about 5 minutes, rotating as needed.
Sprinkle with a pinch of red pepper flakes when serving.
