Have you ever wanted to experiment with a dish after hearing about it from someone else? I was chatting with my mother-in-law one time and she mentioned a dish she made with some potatoes. It got my wheels turning and this is what I came up with. Enjoy!

3 tbsp olive oil
1 sweet potato, peeled and diced small
1 large russet potato, peeled and diced small
1/2 onion, diced
2 cloves garlic, lightly smashed to release the oils
1 sprig rosemary
1/2 c chicken stock
Sauté onion and garlic in olive oil over medium-high heat for about 3 minutes. Add potatoes with a sprig of fresh rosemary. Cook about 10 minutes. Add 1/2 c chicken stock and simmer until all liquid is gone. Allow to brown and char slightly, stirring occasionally.
