Have you ever wanted to dress up breakfast but didn’t have a clue what to make? Hash browns are a great way to do that; not to mention potatoes are usually on hand, inexpensive, and tasty! You only need a little patience to make these. Once you do, you’ll probably want to make them all the time!

5 medium potatoes (russets or red potatoes work well), cleaned and grated
1 tbsp flour
1 tsp salt
1 tsp pepper
2 eggs, beaten
Olive oil for shallow frying
In a large bowl, grate your potatoes. Once completely grated, place potatoes onto the center of a clean dish towel. Because potatoes stain, it may be wise to use a towel you don’t mind getting stained. Wring out as much of the starchy liquid from the potatoes as possible. When the potatoes have been thoroughly wrung out, place the potatoes back into the bowl. Add the flour, salt, pepper and eggs to the potatoes. Blend together well.
Warm about 3 tbsp of oil in a skillet over medium heat. Once you see small ripples, place a heaping helping of potatoes into the skillet. Flatten slightly to help cook evenly. You can make the servings any size you like. I prefer them to be about 3 to 4 inch rounds. Once golden brown, flip over for a few more minutes. Continue this process until all of your potatoes are cooked. If your pan gets dry, simply add a couple more tbsp of oil to the skillet when frying.
Place cooked hash browns onto a cooling rack to drain. Place in a warm spot, such as a warmed oven or a warming tray until ready to serve.
