Have you ever had leftover rice from Asian take out and no clue what to do with it? This recipe is for you! Fried rice is best made with day old rice, so using leftover rice is perfect. Believe it or not, fried rice is so simple to make that it will make you mad to know you pay so much for it when you order it at a restaurant.

6 tbsp olive oil, divided
1 lb protein of your choice, diced (I prefer chicken or pork)
1/2 onion, diced
2 carrots, peeled and diced
1 stalk celery, diced
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper (black or white)
3 c day old cooked rice
3 tbsp soy sauce
2 eggs, beaten
2 tbsp cilantro leaves
In a large skillet, over medium-high heat, add 2 tbsp of oil. When hot, add the protein, cooking for a minute. Add the onion, celery, and celery to the skillet, cooking it until the protein and onions are cooked through, about 3-4 minutes. At this stage, incorporate the garlic, cooking for an additional minute. Season with salt and pepper. When vegetables are cooked, add in the rice, blending well with the vegetables. If the pan looks dry, add more oil. Add the soy sauce to the rice mixture. If it looks dry, add more soy sauce, 1/2 tsp at a time. Mix together well. Once combined, create a well in the middle of the skillet for the eggs. Add oil to the well, then the beaten eggs. Season the eggs with a pinch of salt and pepper. Gently cover the eggs with the rice. Let the eggs cook for a minute and then toss the eggs through the rice. Once eggs are cooked, move to a serving dish and top with cilantro. Enjoy!
*note: if you like, change up the vegetables or use leftover proteins. If using the leftover proteins, add it at the end to simply cook/warm it through.
