Chicken Yakisoba

Have you ever craved a dish that you just knew you could most likely make at home? That is how I came up with my version of chicken yakisoba. This Japanese noodle dish is very easy and quick to make for your friends and family.

Sauce:

1 tbs Worcestershire sauce
2 tsp oyster sauce
2 tsp ketchup or tomato paste
1 tsp soy sauce
1 tsp sugar
1/2 tsp rice vinegar

Remaining ingredients:

1 chicken breast, diced
1 carrot, peeled and cut into matchsticks
3/4 of a head of cabbage, chopped, julienned
1 Small yellow onion, julienned
Salt/pepper
Oil of your choice to cook vegetables and chicken
2 tsp soy sauce
Yakisoba noodles (I found them at my local Asian market)
Sesame oil
Green onion, thinly sliced (optional)

Place 3 tbs of oil in large skillet, on med/high heat. Add chicken, season with s/p. Cook halfway and add vegetables. Season vegetables with some s/p and soy sauce. (This will be a huge batch, but no worries, you’ll take half out and cook the remainder with half the noodles in two batches.) Remove half the vegetables from pan and set aside. Add half the noodles to the vegetables in the skillet. Add half the yakisoba sauce. Gently toss the noodles with the vegetables. Place in a bowl and cook second batch. Finish with a little bit of sesame oil and the green onion.

If you can’t find yakisoba noodles, try spaghetti noodles. It will taste slightly different, but it should be ok. You can also cheat and use yakisoba sauce, but I like to make my own. Play around with the measurements and find the mix that is right for your loved ones.
